
Potato and Tuna Salad

INGREDIENTS
10-12 baby potatoes
¼ cup mayonnaise
2 Tbsp mustard
1 tin shredded tuna, drained
1 small red onion, chopped
2 Tbsp chopped parsley
2 Tbsp chopped chives
salt and pepper to taste

METHOD
Put the potatoes in a large pot with water to cover. Bring to the boil and cook until the potatoes are tender, about 25 minutes. Drain and leave to cool slightly. Halve each potato.
Combine the mayonnaise and mustard in a large bowl. Add the potatoes, tuna, onion and herbs, then season with salt and pepper. Toss gently to combine.
Spoon onto a serving platter, garnish with chives and serve.
