Easy to Cook Portuguese Peri Peri Chicken

1 Easy to Cook Portuguese peri peri chicken
For the Potatoes
1 bag baby potatoes cut in half
10ml Rosemary, finely chopped
Hard Italian Cheese, grated
Salt and pepper to taste
For the Sweetcorn
Small handful Thyme
For the Greek salad
Handful Baby spinach
Handful Wild rocket
½ Cucumber, roughly chopped
½ cup Olives
1 punnet Rosa tomatoes, halved
¼ Red onion, sliced
Vinaigrette Greek dressing
Roast chicken in a bag at 180C for 50-60 minutes
Drizzle olive oil and rosemary over potatoes and season with salt and pepper. Bake at 180 C for 40 minutes until golden brown.
Mix grated hard cheese and chopped parsley and toss warm potatoes through.
Boil corn in boiling water for 10 minutes, remove and char on a hot griddle pan. Remove from heat and brush with butter and sprinkle over thyme.
Mix the salad ingredients together and dress with vinaigrette Greek dressing.
