Poached Plums with Clover Vanilla Dairy Snack

Poached Plums with Clover Vanilla Dairy Snack

Serves: 3
Preparation time: 10 minutes 

2 cups water
1 cup fresh orange juice
½ cup golden castor sugar
1 tsp vanilla essence
1 orange, peeled
2 star anise, whole
3-4 cloves, whole
1 cinnamon stick
6 plums, whole

For serving
500g Clover Classic Dairy snack, Vanilla Flavour
A few sprigs of mint

Combine water, orange juice, sugar, vanilla, orange peel and spices in a saucepan. Over low-medium heat. Stir until the sugar has dissolved. Poach plums in the syrup for 20-25 minutes or until tender. Remove plums from the syrup and gently remove the skins. Set aside. Turn to a medium-high heat and bring the syrup up to a boil. Continue cooking until the syrup has reduced by half. Remove from the heat and set aside. 
To serve, spoon a generous amount of the Clover Classic Vanilla dairy snack into 3 deep dessert bowls. Make a well in the middle of each bowl and gently place two plums into each bowl. Drizzle some of the syrup over the plums and garnish with a sprig of mint. Enjoy!
