Plascon Pasta with blue cheese sauce and caramelized mushrooms

Serves: 3-4

2 tbsp chopped parsley
2 cups pasta of your choice
¼ cup sunflower oil
2 tbsps butter
1 onion, sliced and divided
1 tsp garlic paste
250ml cream
2 x 250g blue cheese
1 cup mushrooms, sliced
2 sprigs thyme
salt and pepper to taste
Cook the pasta according to package instructions, reserve a ¼ of the pasta water then strain the pasta. Set it aside but drizzle with a little bit of oil, add parsley and toss. In a pan, heat up about 2 tbsps of sunflower oil then saute half of the onions until translucent. Add the garlic and fry until fragrant, about 2 min, before adding the cream. Add half of the blue cheese into the cream and cook until slightly reduced. About 5 min then add the remaining half leaving about 2 tbsp for garnish. Cook for another minute then switch off the heat. Fry the remaining onion and the mushrooms on medium to high heat in the remaining oil and butter making sure to caramelize them. Reduce the heat and add the thyme.
To serve
You can either plate the pasta first followed by the sauce and mushrooms or toss the pasta in the sauce then top with the mushrooms. Garnish with the remaining blue cheese then serve and Enjoy.
