
Layered Sago Pudding

INGREDIENTS
1 cup sago
2 cups cold water
1L full cream milk
1 cup deshelled pistachios, chopped
5 Tbsp. sugar
1 tsp ground cinnamon
1 tsp ground cardamom
1/4 tsp salt
to assemble
4 medium sized jars or glasses of your choice
1 cup deshelled pistachios, roughly chopped
1 cup blueberries
2-3 kiwi fruit, peeled and chopped
2 green apples, cored and chopped
rosemary flowers
lavender flowers
METHOD
Combine sago and water in a medium sized mixing bowl and set aside for 30 minutes for it to soak. Meanwhile, add milk to a large sauce pan along with the chopped pistachios and bring to the boil. Reduce to a simmer and add the sago, sugar, ground cardamom and cinnamon and salt. Continue to simmer for 15-20 minutes or until the desired consistency is reached.
Remove from heat and allow to cool to room temperature. To assemble the final pudding, start by spooning in a few tablespoons on the sago into the bottom of your glasses. Next, add a generous layer of the roughly chopped pistachios.
Finally spoon in more of the sago pudding to top off the glasses and garnish with blue berries, edible flowers, kiwi fruit and green apples.
Refrigerate until ready to serve.
