
Pineapple and Ginger Lamb Chops

Serves: 4-6

INGREDIENTS
Tjops
1 Tbsp paprika
1 Tbsp steak and chops spice
1 tsp black pepper
6-8 lamb chops
oil for frying
For the Glaze
½ cup syrup from tinned pineapple
1 tsp minced garlic
1 tsp minced ginger
2 Tbsp soy sauce
1 Tbsp honey
Rainbow Salsa
½ pineapple, cut in small cubes
½ red onion, finely chopped
1 Tbsp chopped coriander leaves
1 red chilli, chopped
2 tsp oil
1 tsp lime juice
salt and pepper
lime wedges, to serve
METHOD
Tjops and Glaze
In a small bowl, combine the paprika, steak and chops spice and black pepper. Rub generously over lamb chops. In a pan, heat the oil and fry the chops till brown, 3-5 minutes on each side. Remove from pan and set aside.
Add all the glaze ingredients to the same pan and bring to a gentle simmer on low heat. Simmer until thickened, 5-10 minutes. Return the chops to the pan and cook for 4-5 minutes on each side.
Rainbow Salsa
Mix all the ingredients for the salsa. Serve the chops with the salsa.
