For the pickled slaw
½ cup White wine vinegar
3T maple syrup
1t smoked paprika
1t smoked chilli flakes
3T parsley roughly chopped
Woolworths Ruby slaw mix
4 X Woolworths beef patties
4 X Gouda slices
Lettuce to add
Tomato slices
4 X Burger buns, toasted
For the parmesan crusted baby marrow
300g baby marrow cut into thick match stick like shapes
3T extra virgin olive oil
50g Freshly grated parmesan
1 cup toasted breadcrumbs
salt and freshly ground black pepper to taste
Add the vinegar and maple syrup to a mixing bowl along with the paprika, chilli flakes and parsley. Mix together to combine before adding the ruby mix and coating.
Cook the burgers as per the instructions once almost done add the cheese to melt over the patties.
Add the lettuce and tomato to the base of the bun before adding the patty and slaw to finish with the top bun and serve with the parmesan crusted baby marrow.
For the baby marrow:
Drizzle some olive oil over the baby marrow before sprinkling the grated parmesan over followed with the brea
dcrumbs before popping it in the oven to roast for 20 minutes at 180
