Beef stew and Tomato and Onion Relish

Phutu Pap, Beef stew and Tomato and Onion Relish

Ingredients
Phutu pap
1½ cup water

¾ t salt
2 cups mealie meal

Beef stew
¼ cup oil

3 onions, chopped
1 kg beef brisket or chunk, cut in pieces
2 cups beef stock
2 large ripe tomatoes, grated
4 cups morogo or spinach
salt en pepper to taste

Tomato and Onion Relish
3 tbsp oil

3 onions, finely chopped
3 cloves garlic, finely chopped
2 t hot curry powder
10 tomatoes, grated
salt and pepper to taste

Method
Phutu pap
Bring the water and salt to the boil in a heavy-bottom saucepan. Then pour in the mealie meal all in one motion without stirring. Cover the saucepan, lower the heat and simmer for 10—15 minutes. Stir with a fork until  crumbly. Replace the lid and allow to cook further over low heat for 30—40 minutes.

Beef stew
Heat the oil in a large saucepan and sauté the onions until soft and golden, about 5 minutes. Add the meat and brown well. Add the beef stock and cook until the meat is soft, 40—50 minutes. Add the tomatoes and spinach and simmer gently until all the vegetables are cooked. Season to taste.

Tomato and Onion Relish
Heat the oil in a large pan and sauté the onions until soft and golden, about 5 minutes. Add the garlic and curry powder and cook for 1 minute. Add the tomatoes and cook until a thick relish. season to taste.
