Peri Peri Chicken necks

Peri Peri Chicken necks

Serves: 2-4
Recipe time: 20 min
1 kg chicken necks
4 garlic cloves, roughly chopped
1 onion, chopped
1 tsp cayenne pepper
1-2 tbsp Paprika
1-2 tbsp chicken spice
1-2 tbsp soup powder of your choice (I used cream of chicken soup powder)
1-2 cups liquid chicken stock
2 red chillies, finely sliced
1 can butter beans (optional)
salt and pepper to taste
In a bowl, place chicken necks then add all the spices and mix well. Coat the spiced necks generously in the soup powder and set aside. While marinating, fry the onion in a pan on medium heat until fragrant, then add the garlic and chilli and fry for about 1-2 min. Throw in the necks and fry for a further 7-10min before adding the stock. Simmer for another 5-10min.

You can now add the butter beans if using or serve immediately.
