Penne con Zuchinni

Penne con Zuchinni

Serves: 4
Preparation time: 15 minutes
Cooking time:  20 minutes
4 Tablespoons Olive Oil
2 Onions (sliced or chopped)
400g Zucchini (roughly chopped)
1 Cup Dry White Wine
250ml Vegetable Stock (don’t use all)
Salt and Pepper
Parmesan Cheese (for serving)
400g Penne
1 Litre water
10g Salt
1tablespoon olive oil
Cover base of pan in Olive Oil. Add onions and gently sweat. Add Zucchinni and fry, add wine and cook out, add stock a little at a time until absorbed, blitz in food processor. Season to taste
Boil pasta water with salt and olive oil. Add penne and cook until Al Dente
(Check the sauce and if too thick add 1 ladle of pasta water to sauce) Drain and mix with sauce
Garnish with parmesan cheese and rocket or micro-herbs. Buon Appetito
