Pea Salad with VinaigrettePea Salad with Vinaigrette

For the Mayonnaise:
Serves 2

200g Sugar Snap peas
125 g Mange Tout peas
200g Fresh peas
70g Red onion, finely sliced
200g of Feta, cubled over salad

3 tablespoons of olive oil
2 tablespoons of Italian white wine vinegar
1 heaped teaspoon of Wholegrain Mustard
Salt and pepper to taste

Top and tail the Sugar Snap peas and the Mange Tout.
Pour some boiling water over the peas for a couple of minutes then drain
Place everything inclusing the sliced red onions and crumbled feta into a salad bowl.
Add the vinaigrette just before serving.

For vinaigrette:
Shake all ingredients together and pour over salad.
