Ox liver with bacon and jalapeno

Ox liver with bacon and jalapeno

1kg Ox liver
1 large onion sliced
4 jalapeno, thinly sliced
3 cloves garlic, finely chopped
2 tbsp Cajun spice
2 tbsp Paprika
¼ cup bbq sauce, more if you want it saucier
oil for cooking
salt and pepper to taste

Cube the ox liver then place in a bowl. Coat in a little oil and all the spices then set aside for about 20 min. You can cook immediately if you prefer not to wait.
In a pan, on high heat, pour in oil and once hot, fry ox liver for about 5 min then remove from the pot and set aside. In the same pan on reduced heat (set to medium), add about 2 tbsp oil and fry onions until fragrant then follow with garlic, bacon and jalapenos. Fry for about 3-4 minutes then return liver into the pan, fry for 2 more minutes, add BBQ sauce, mix well for 1 minute then serve.

Can be enjoyed with pap or even in a roti.
