
Ostrich Milk Egg Nests
Ingredients
1 cup shredded coconut
½ cup peanuts
1 cup chocolate chips
24 mini eggs/jelly beans
Preheat the oven to 200C. Spread the shredded coconut and peanuts onto a baking tray for toasting
Place into the oven for 5-10 minutes, until the coconut and peanuts are light brown in colour – or toast them in a dry pan.
Add chocolate chips to a microwave safe bowl and melt for 20-30 seconds at a time until the chocolate is melted.
Add the cooled coconut, peanuts and melted chocolate into a large bowl and toss to combine.
Use a spoon or to scoop about 2-3 tablespoons of the mixture onto a piece of greased baking paper and shape into a nest.
Top each nest with 2-3 mini eggs. Repeat with remaining ingredients.
Let nests set at room temperature or place in fridge to speed up the process.
