Olives, Caramelized Onion, Feta & Bacon Focaccia

Olives, Caramelized Onion, Feta & Bacon Focaccia

Ingredients
500g ready made pizza dough
350g bacon
handful Kalamata Olives pitted and sliced
1 wheel feta cheese
Pinch of ground black pepper
Handful fresh wild rocket
 
Caramelized Onions
2 large red onions sliced
30ml virgin olive oil
2Tbsp brown sugar
30ml balsamic vinegar

Method
Heat the lemon and orange juice in the pan and add the olive oil and butter. Bring to the boil then turn the heat to low for 5 minutes. Add capers and orange zest.
Remove from the stove then set aside. To prepare the kingklip; season with salt and freshly-ground black pepper.
Pan fry it briefly on both sides in butter, on a high heat. Place the pan in the oven for 4 minutes, remove and serve immediately topped with the sauce verge and micro herbs.
