Olive Pride Hot Cross Bun Family Stuffed Roast Chicken

100ml Clover Olive Pride blend of seed oils and extra virgin olive oil plus extra for roasting
1 brown onion, finely chopped
2 cloves garlic, chopped
4 hot cross buns, roughly torn
⅓ cup chicken stock
1 pear, peeled, cored and grated
handful of chopped parsley
1 tbsp of mixed dried herbs
70 g walnuts, chopped
1 whole chicken
coarse slat
ground black pepper

For serving:
roasted butternut
roasted rainbow carrots
salad of your choice

Preheat the oven to 180°C. For the stuffing, gently toast the torn hot cross buns in a medium sized pan on a medium heat until golden and crispy. Remove and set aside. In the same pan, place Clover Olive pride and allow to heat up. Add the onion and chopped garlic and gently fry for 2-3 minutes. Add the chicken stock, grated pear, parsley and dried herbs along with the chopped walnuts and toasted hot cross buns. Stir to combine and season to taste.
Next carefully spoon the stuffing into the cavity of the chicken and tie the legs together with string. Drizzle the chicken with more Clover Olive Pride and sprinkle some coarse salt and ground black pepper generously on the chicken. Drizzle some Clover Olive Pride in a roasting pan. Place stuffed chicken in the roasting pan and roast for 1 ½ hours. Until golden and crispy. Remove from oven and serve with roasted veg and salad of your choice.
