
Nutrient Packed Mushroom Burger

Cooking time: 10 minutes
INGREDIENTS
2 portobello mushrooms
2 Tbsp olive oil
1 tsp garlic powder
1 Tbsp lemon zest
salt and pepper to taste
For the sauce:
¼ cup basil pesto
¼ cup plain yoghurt
salt and pepper, to taste
To serve:
2 whole wheat burger buns, toasted
2 cups rocket
1 tomato, sliced
1 red onion, cut into rings and grilled
sweet potato fries – air fried
METHOD
Heat a griddle pan over medium to high heat, in a bowl add portobello mushrooms, olive oil, garlic powder, lemon zest, then season with salt and pepper. Mix together until well combined then cook on the griddle pan for 2-3 minutes on each side.
For the sauce: Add basil pesto, plain yoghurt, salt and pepper into a bowl and mix until well combined.
Assembly: Spread sauce onto the toasted whole wheat burger buns, then place grilled mushrooms onto each bun, followed by grilled onions, tomato and rocket. Top with the remaining bun and serve with sweet potato fries.
