Nulaid Tiramisu French Toast

Serves: 2
Cooking Time: 20 minutes

6 slices brioche bread
2 Nulaid Large Eggs
¼ cup milk
2 Tbsp espresso
2 Tbsp butter
1 cup fresh cream
2 Tbsp icing sugar
1 tsp vanilla essence
250g mascarpone cheese

To serve:
¼ cup cocoa powder
sprigs of fresh mint


In a large bowl, whisk together Nulaid Eggs, milk and espresso. Soak the bread in the mixture. Heat a large pan on medium heat and melt the butter. Fry each slice of bread for 1-2 minutes on each side until golden brown. For the filling, whisk cream, icing sugar and vanilla together until stiff peaks and gently fold in the mascarpone cheese. To serve, top each slice with the filling mixture and dust with cocoa powder. Garnish with sprigs of fresh mint and serve.
