Mommy’s Rice Pudding

1 cup Excella rice, cooked
1 cup milk, divided
3 tbsp white sugar
¼ teaspoon salt
1 egg, beaten
1 tablespoon butter
½ teaspoon vanilla extract
1 tbsp castor sugar
½ tsp cinnamon

Preheat oven to 195C.
In a baking dish combine cooked Excella rice, sugar and salt. In a small bowl, whisk together the milk and egg. Pour this mixture over the rice and stir through before transferring into the oven to bake. A lovely crust will form and the dish is ready once the ‘custard’ (egg mixture) is set.
Mix the castor sugar and cinnamon together and sprinkle onto the rice pudding immediately after it comes out of the oven.
Serve warm.
You can flavour your milk by infusing it with aromatics such as star anise, cardamom or cloves for additional flavour.
