Clover Mini Vanilla Plum Cakes with Custard

Mini cakes
150 g butter
185 g sugar
2 eggs
finely grated zest of ½ lemon
1 tsp vanilla essence
125 ml buttermilk or plain yoghurt
215 g self-raising flour
8 plums, halved
To serve
1 Tbsp icing sugar for dusting

Preheat the oven to 160 °C. Grease 15 hollows of muffin pans and line with baking paper.
Cream together the butter and sugar. Beat in the eggs one at a time. Mix in the lemon zest and vanilla. 
Gently stir in the buttermilk or yoghurt and flour until evenly combined. Do not overmix.
Spoon the batter into the prepared muffin pans, allowing 1 rounded tablespoon per muffin. 
Arrange half a plum, cut side up, on top of the batter in each muffin hollow.
Bake for 25 minutes until cooked and golden brown. The fruit will sink into the cakes as it cooks.
Remove from the oven and leave to cool for at least 15 minutes before removing from the pans.
Dust with icing sugar and serve with Clover Classic Custard.
