Mini pizza pockets

Makes: 6-9 pockets
Prep time: 10 min
Cooking time: 15 min

INGREDIENTS
1 sheet puff pastry

½ cup store bought marinara sauce
½ cup mozzarella cheese, grated
¼ cup mini pepperoni slices
1 egg, beaten

METHOD
Preheat oven to 190°C.

Grease a mini muffin tray and set aside. Cut the puff pastry into small, equal squares around 4cm by 4cm then place into the greased muffin cups. Start layering with a teaspoon full of marinara sauce followed by the cheese and pepperoni pieces. Brush the edges of the pastry with the beaten egg then bake in the oven for about 15 min or until until golden brown. Remove from the oven once baked then set aside to chill before packing into the lunchbox. Enjoy!
Can be served hot or cold.
