Microwave Poached Egg

Preparation time: 5 minutes
INGREDIENTS
1 egg
½ ripe avocado
1 slice of whole grain or sourdough bread
salt and pepper, to taste
juice of ½ lemon
1 tsp sesame seeds
drizzle of olive oil
fresh coriander for garnish
METHOD
Crack the egg into a microwave-safe mug or bowl, add about ½ cup of water and a pinch of salt.
Microwave on high for 45 seconds to 1 minute (microwaves vary, so keep an eye on it), until the white is set and the yolk is runny.
Carefully remove the egg from the water with a spoon and set aside.
In a small bowl, mash the avocado with salt and pepper to taste until smooth. Stir through the lemon juice. Toast the bread to your desired crispiness.
Spread the mashed avocado over the toast, then place the poached egg on top.
Sprinkle sesame seeds over the egg and avocado, then drizzle with olive oil.
Finally garnish with fresh coriander and serve!
