Mature Free Range Steak with Coffee Rub

Coffee Rub for Mature Free Range Steak
2x portions Mature Free Range Rump
3 Tbsp Italian Freeze Dried Italian Coffee
1 Tbsp Brown Sugar
1½ Tbsp Maldon Salt
½ Tsp Cayenne Pepper
½ Tsp Paprika
½ Tsp
Ground cumin
1 Tsp Celery seeds

Extra ingredients:
Cooking Olive Oil
Tender stem Broccoli, blanched
Sliced Carrots, blanched
Baby Potatoes, roasted

Grind coffee lightly in grinder leaving it a little coarse still.
Heat pan and dry roast the celery seeds.
Grind the seeds till fine with coffee grinder or mortar and pestle.
Mix all ingredients besides the extra.
Rub the steak generously on both sides with the dry rub you have made.
Heat a griddle pan/frying pan till smoking hot.
Brush with some oil and grill the steak immediately.
Cook steak for about 6 minutes not turning more than twice.
Allow steak to cool before slicing.
Serve the sliced steak with some vegetable.

Ultimate Iced Coffee

150ml strong coffee
Ice cubes
Condense milk

Make coffee and allow to come to room temperature.
Fill a glass with some ice cubes and the coffee.
Pour in a generous amount of sweetened condense milk.
