Matar (Pea) Pulao

Matar (Pea) Pulao, Indian Christmas recipes

2 Dry red chilies
1tsp  whole Cumin
1 piece of cinnamon
2 cardamom
4 cloves
4 whole black pepper corns
4 tbs Ghee (Clarified Butter)
1 large onion finely chopped
2 Cups of Frozen peas thawed
2 cups of basmati rice washed with cold water
1tbs Fresh ground ginger
1tbs Fresh ground garlic
1tbs Red Masala (Combination of Red Chilli, Ginger and Garlic) - available at most Indian shops and butcheries
5 cups hot water
Salt to taste
Heat Ghee and add red chillies, cumin, cinnamon, cardamom, cloves and peppercorns.. Fry on medium heat till aromatic
Add the onion and fry till golden brown
Add peas, ginger, garlic and red masala. Fry on medium heat for 5mins
Add basmati rice and fry for another 2mins
Add 2 cups of hot water and bring to the boil
Add the water evaporates add another 2 cups of hot water
Test to see if rice is done. Should be soft but not mushy. If rice still not done, add another cup of hot water and let it evaporate and should be done 8 ) Turn off heat and leave lid on and serve after 5mins
