Masala Tea

Masala Chai
Recipe: Sadika Fakir

Preparation: 5 minutes
Cooking: 20 minutes
Masala Chai Spice Blend 
2 small cinnamon sticks
½ t black pepper corns
¼ t white peppercorns
½ t fennel seeds 
4—6 cloves
6—8 cardamom pods 
¼ t ground nutmeg
¼ t ground ginger
2 T loose tea leaves or 4 tea bags 
2 pieces of fresh ginger crushed roughly 
500 ml boiling hot water 
sugar to taste 
600 ml full cream milk, warmed 

Masala Chai Spice Blend
Ground the whole spices to a fine powder and add the nutmeg and ginger.
Add the ginger, tea leaves or tea bags and masala chai spice blend to a heavy based pot and pour in the boiling water. Boil for 5 minutes on high heat.
Decrease heat to medium, add the milk and sugar and simmer for 5-10 minutes.
Decrease heat to low and gently simmer for 5 minutes. Strain to serve.
