
MAPLE, SMOKEY, ESPRESSO BAKED BEANS

Pork rashers 400g, each rasher sliced into 3
Leeks 4, washed and roughly chopped
Garlic cloves 4, finely grated
Smoked paprika 1t
Chilli flakes 1t
Lazy kettle Hickory liquid smoke 1T
Espresso shots 2
Maple syrup 1T, to sweeten
Tomato paste 2T
Italian whole peeled tomatoes 400g
Butter beans 2 x 400g, drained
Salt, to season
Ciabatta sliced and lightly toasted, to serve
1. Heat a saucepan over medium to high heat, with a little oil. Fry the pork rashers until golden and the fat has rendered out. Remove the pork.
2. Add the chopped leeks to the pork fat and fry until golden. Add the garlic, smoked paprika, chilli flakes and continue cooking for a few seconds. Add the rest of the ingredients, along with the pork rashers and simmer for 10-15 minutes.
3. Season with salt and serve with slices of toasted ciabatta.
