Mama Bake Easter Speckled Egg Cake

Mama Bake Easter Speckled Egg Cake

Serves: 6-8
Baking time: 20-25 minutes 
 
For the chocolate sponge cake 

 
Ingredients
175g Clover Mama Bake Margarine
175g castor sugar 
3 large eggs 
50g cocoa powder
100g self raising flour 
2 tsp milk
Speckled Eggs, different sizes for decoration
Small chocolate bunnies for decoration
 
Icing
100g white chocolate, melted 
170g Clover Mama Bake, softened 
350g icing sugar, sifted
food colouring (pastel shades)
 
Speckles
Brown Food colouring or cocoa
3 tbsp water 
Stiff small pain brush 
 
Method
Preheat the oven to 190C.
Grease and line  x2 20cm cake tins. 
 
In a large bowl beat the Mama bake and sugar until its light and fluffy. Add eggs one at a time and give it a good mix. 
 
Add the cocoa and flour to the egg mixture and mix again, then add in the milk and mix until well combined
 
Divide the mixture between the 2 cake tins and bake for 20-25 minutes. Leave to cool in the tins for 10 minutes before removing and allowing to cool further. 
 
To make the icing, beat the Mama Bake margarine until soft then add spoonfuls of the icing sugar and mix well. Add the melted chocolate and mix until still but spreadable consistency. Add the food colouring of your choice. 
 
To assemble the cake, sandwich the 2 layers with the icing and spread evenly. Use the rest of the icing to cover the cake, smoothing it out on the sides and top. 
 
Add enough cocoa or brown colour to water to make a thin paste. Dip the paint brush in and using your index finger, flick the bristles toward the cake to create the platter pattern. Repeat around and on top of the cake.
Top the cake with different size speckled eggs, whole and cut. Add a chocolate bunny or two for cheer.
