
Malva Pudding served with Clover Classic Custard

Baking time: 30-35 minutes
Ingredients
Malva pudding
1 egg
1 tsp vanilla essence
1 tbsp butter, softened
1 tbsp apricot jam
1 cup sugar
1 tbsp vinegar
1 cup milk
1 cup flour
1 tsp bicarbonate of soda
1/2 tsp baking powder
pinch of salt
Sauce
½ cup milk
½ cup cream
½ cup sugar
½ cup butter
To serve
A generous amount of Clover Classic Custard.
METHOD
Preheat the oven to 180C. Whisk the egg, vanilla essence, butter, sugar and jam together. Beat until pale and fluffy. Add in the vinegar, milk, flour, bicarbonate of soda, baking powder and a pinch of salt and then mix until well combined. Pour the batter into a greased oven dish and bake for 30-35 minutes or until the malva is golden brown.
Meanwhile, combine the ingredients for the sauce in a medium sized saucepan and cook on a medium heat for a few minutes, until the butter and sugar has melted. Remove the malva from the oven and use a skewer stick to poke holes into the surface. Immediately pour the sauce over the baked malva pudding and allow to sit for a few minutes until the sauce has been absorbed. Serve with a generous pouring of Clover Classic Custard. Enjoy.
