Magwinya with Polony Cheese

Magwinya with atchar and polony cheese slices

8 magwinya/fat cakes (recipe below)
16 slices Clover Polony flavoured cheese slices
1/3 cup atchar
Using your fingers, break open your magwinya and stuff each one with a slice of Clover Polony flavoured cheese slices and atchar.

Prep time: 1h 30 min
Servings: 4-6

500g flour
4 tbsp/30 grams of sugar
2 tsp instant yeast
1/2 teaspoon salt
500ml/2 cups warm water
1 tbsp vegetable oil (plus more for deep frying)
In a clean bowl, mix the flour, sugar, yeast, and salt together.
Mix the warm water and vegetable oil together then and to mix into flour to form a soft dough.
Once the dough has been mixed very well, cover with a tea towel and set aside to rise for an hour. There's no need to knead the dough.
After an hour, the dough should have doubled in size. Mix the dough again—this helps to achieve softer dough. After mixing, allow the dough to rest for a further 20 minutes.
In the meantime, heat up enough vegetable oil in a pot for deep frying over medium heat.
Scoop out some batter with a large spoon and drop it into the hot oil. Use a second spoon to push the dough into the hot oil if needed. Ensure the oil is being heated under a medium flame to prevent the magwinya from browning too quickly without fully cooking on the inside. Fry the magwinya until golden brown, turning halfway to ensure even browning.

Transfer to paper towel to drain excess oil and enjoy.

Magwinya can be enjoy as they are or with fillings of your choice.
