Macerated Exotic fruit Parfait

Macerated Exotic fruit Parfait
Serves: 4
Recipe time: 30 min
1/2 tub mascarpone
1/2 cup whipping cream
2 tbsp honey
2 tbsp lime juice
1/4 tsp nutmeg
2 dragon fruit, cut into small cubes
2 prickly pear, cut into small cubes
1 tsp verjuice
1 tbsp castor sugar, more if you like it sweeter)
2 tbsp pomegranate rubies
1/2 cup granola
mint, to garnish.
In a bowl, mix the mix the dragon fruit, prickly pear and half of the pomegranate rubies. Add the verjuice, and castor sugar and after mixing thoroughly, set aside for about 15 minutes to allow the fruits to break down.
In the meantime, start whipping your cream to stiff peaks. Set aside. Soften the mascarpone with a spatula then add honey, lime juice and honey. Now add the cream in three batches into the mascarpone mixture to make sure it is fully incorporated and smooth. You can now start assembling the parfait.
Start with a generous layer of granola at the bottom followed by the cream, then fruits and alternate until you get to the top. Garnish the top with the remaining pomegranate rubies and fresh mint.
