Lemon Sorbet

Lemon Sorbet on Afternoon Express

Lemon Sorbet

Makes 500ml
 
1¼ cup water
140g castor sugar
35g golden syrup
2 teaspoons fat free milk powder
160g fresh lemon juice
 
Place the water in a saucepan, add the sugar and golden syrup and bring to the boil.
Once the sugar has melted remove from the heat, pour the liquid over the milk powder and whisk until combined. Chill completely.
Once chilled add the lemon juice and freeze in an ice cream maker or place in a plastic container and whisk the mixture every hour or two while freezing.
Then you take it out and enjoy.
