Lemon Meringue Mousse made with Clover Bliss Double Cream Plain Yoghurt

Lemon Meringue Mousse made with Clover Bliss Double Cream Plain Yoghurt

INGREDIENTS

2 cups Clover Bliss Yoghurt Lemon Meringue Flavour
½ cup melted white chocolate
1 tin chickpea liquid (aquafaba)
⅛ tsp cream of tartar
¼ cup castor sugar
Raspberries, to garnish
White chocolate shavings, to garnish

METHOD

In a clean bowl, with a hand mixer or whisk, beat the chickpea liquid (aquafaba) until foamy. Add the cream of tartar and beat until soft peaks form (the soft peaks should be starting to hold). Gradually beat the castor sugar into the meringue until stiff peaks form and tip of peak doesn't fold over. Set aside. 
In a separate bowl, add the Bliss Lemon Meringue and melted chocolate. Fold a third of the meringue into the Bliss mixture and incorporate fully. Add the remaining meringue into the Bliss mixture and fold in carefully making sure not to knock out too much of the air. Set in the fridge if you are not serving immediately.
To serve: Spoon a few tablespoons of the Bliss dessert into a dessert bowl, followed by a layer of raspberries then another layer of the Bliss dessert. Finish with some berries and white chocolate shavings. Chill until ready to enjoy.
