Lemon Delicious Pudding

Lemon Delicious Pudding

150 g butter
2 t finely grated lemon rind
⅓ cup lemon juice
1½ cup castor sugar
¾ cup self-raising flour, sifted
1½ cups milk
4 eggs, separated
icing sugar, to dust
Clover Classic Custard for serving
Preheat the oven to 180 C. Grease six 1 cup-capacity ramekins or ovenproof pudding bowls.
Place butter, lemon rind, lemon juice, flour, milk and egg yolks in a bowl. Whisk to mix well.
Beat the egg whites until soft peaks form. Using a metal spoon, fold one-quarter of the egg white into the flour mixture. Gently fold in the remaining egg white.

Spoon the mixture into the prepared ramekins. Place the ramekins in a large oven pan. Pour boiling water into the oven pan until halfway up the sides of the ramekins. Bake for 30 minutes or until golden and just set (It will still be a little wobbly).

Dust with icing sugar and serve with Clover Classic Custard
