
Lemon and Poppy Seed Muffins

INGREDIENTS
½ cup chia seeds
½ cup water
zest of 2 lemons
juice on 1 lemon
2 tbsp poppy seeds
2 cups almond flour almond flour
1/3 cup xylitol
1/3 cup coconut flour
1/3 cup whey protein powder
1 tbsp baking powder
1 tsp salt
1/3 cup Clover Low-Fat Long-Life Milk
3 eggs
¼ cup melted butter
1 tsp vanilla essence
METHOD
Preheat the oven to 180°C.
Grease a 12-hole muffin pan with butter.
Combine the ground chia seeds and water in a small bowl and set aside.
Combine the lemon zest, poppy seeds, almond flour, xylitol, coconut flour, whey protein powder, baking powder and salt in a large bowl.
In a separate bowl, whisk the milk, eggs, lemon juice, melted butter and vanilla essence together.
Add the soaked chia seeds (they should have absorbed all the water by now to the milk mixture and whisk until the mixture is completely free of lumps.
Fold the wet ingredients into the dry ingredients using a whisk or big spoon until the mixture is well combined.
Pour into the greased muffin pan and bake for 35 minutes or until golden brown and a skewer comes out clean.
