Lemon and Pepper Chicken Wings with a Garlic Yoghurt Dip made with Clover Authentikos

Lemon Pepper Wings
1 kg Chicken wings 
1 cup cake flour
2 tsp salt
1 tsp pepper
oil for deep-fry
¼ cup butter, melted
1½ Tbsp lemon pepper seasoning
2 Tbsp chopped parsley

To garnish 
lemon wedges
fresh Italian parsley 
chopped chives

Yoghurt Dipping Sauce 
½ cup Clover Authentikos Greek Style Plain Yogurt
3 Tbsp finely chopped fresh chives
1 clove garlic, minced
juice of ½ a lemon
pinch of salt
pinch pepper

Cut the chicken wings into wingettes – remove tips and cut each wing in two.
Place the flour in a large bowl and season with the salt and pepper. Stir to combine.
Place the chicken wings in the bowl and gently toss to coat with the flour mixture.
Heat enough oil for deep-frying in a large pot to 170 – 180 °C.
Add the chicken wings to the pot in batches of about 6 – 8 wings. Fry for 10 – 12 minutes or until wings are deep golden brown and cooked through. Repeat with the remaining wings. In a small bowl, combine the butter and lemon pepper seasoning. Brush the butter mixture over the chicken wings and toss to coat. Sprinkle with the parsley.
Garnish with lemon wedges and parsley sprigs if desired.

Dipping Sauce 
In the meanwhile, mix the yogurt, chives, garlic, lemon juice, salt and pepper in a bowl. Taste or adjust seasoning as required.
