Korean Style ribs on Afternoon Express

Korean style BBQ beef ribs with Asian rainbow slaw

For the Korean sauce
BBQ sauce 1 cup (reserved from the prepared ribs)
Smoked chilli flakes 1t
Korean Gochujan paste or chilli sauce 1T
Sesame oil 2t
Garlic 3 finely grated
Ginger 4cm piece, finely grated
Rice vinegar ¼ cup
White sesame seeds 1T
Water ½ cup

Woolworths BBQ Beef ribs

For the slaw
Raw peanuts 100g
Woolworths rainbow salad 2 X 220g punnets
Red salad onions 3, sliced into ribbons and placed in cold water to curl
Coriander 15g roughly chopped
Mint 10g finely chopped
Nori sheets
Fish sauce 2T
Rice wine vinegar
Red chilli 1 finely chopped
Lime 2, juiced

1 Prepare the ribs by placing the rack of ribs on a roasting tray. Add the remaining BBQ sauce to a mixing bowl along with the remaining ingredients for the sauce. Stir to combine.
2 Coat the ribs with some of the Korean sauce and place in the oven to cook, basting with the sauce every few minutes.
3 For the slaw toast the peanuts in a dry pan before adding to a mixing bowl along with the remaining ingredients, toss to combine before serving.
