Korean Chicken Dogs

Korean Chicken Dogs

Serves: 2-6
Prep time: 30 min

Ingredients
2cm x 9cm low moisture mozzarella sticks
Chicken viennas
Disposable chopsticks
1 cup panko breadcrumbs
Oil
Gochujang sauce + tomato sauce + mayo

Batter
1 ¼ cup cake flour
2 tablespoon sugar
½ teaspoon garlic powder
1 teaspoon paprika
1 teaspoon chilli flakes
1 teaspoon dried thyme
½ teaspoon brown onion powder
½ teaspoon celery salt
½ teaspoon salt
2 teaspoon baking powder
125ml milk
1 egg

Instructions
Skewer cheese &chicken viennas
Store in fridge
Mix dry ingredients in mixing bowl, add milk &egg till batter is smooth
Batter should be thick &sticky, if kitchen is warm, cool in fridge
Pour cold batter into loaf pan, to coat skewers easily &place panko breadcrumbs in separate container
Heat oil to 180 degrees
Coat dogs by rolling it a few times in the batter, not too thick, but make sure dogs are fully sealed in batter
Coat dogs with panko breadcrumbs, then deep-fry in oil for 3 to 5 min until golden brown, keep turning dogs to ensure batter is fully cooked

Serve with Korean Mayo, sesame seeds, coriander, red onion &spring onion

Vegetable Mayo

Roasted Butternut/Jewel Sweet Potato &Yogurt/Mayo
Roast half sliced pitted butternut, splashed with oil and S&P in oven, until soft
Cut into chunks, blend with full cream yogurt, mayo &apple cider vinegar, until smooth puree
5 Cups butternut
1 cup mayonnaise
1 cup full cream yoghurt
¼ cup apple cider vinegar
Season to taste
Refrigerate

Roasted Beetroot &Yogurt/Mayo
Roast beets, top leaf area sliced off, with splashes of oil and S&P in oven, until soft
Cut into chunks, blend with full cream yogurt, mayo &apple cider vinegar, until smooth puree
Sprinkle with spring onion &sesame seeds
Season to taste
Refrigerate

Spinach &Yogurt/Mayo
Bunches of spinach, washed &hard white stems cut off
Place in sauce pan with water and S&P
Cook until soft
Drain water &blend wilted spinach with full cream yogurt, mayo &apple cider vinegar, until smooth puree
Season to taste
Refrigerate

Serving
Use any vegetable puree with Bao Buns,
Chicken Wraps or Chicken Burgers
Also for Rustic fries &Sweet Potato Fries
