KOO Homemade Samoosas

For the filling
1 tbsp oil
1 onion, chopped
1 tbsp garlic and ginger paste
1 tsp cumin and coriander powder
500g beef mince
1 tin KOO Mixed Vegetables in Hot Curry Sauce
2 tbsp chutney
2 tbsp coriander, chopped
1 pack samoosa pastry, defrosted and covered with a damp cloth
Oil to fry
Salt and pepper
Chutney and cucumber raita to serve
In a large pot, brown the onion, spices, garlic and ginger paste in oil. Add in your beef mince, and cook until browned. Add the KOO Mixed Vegetables in Hot Curry Sauce. Bring to the boil, then allow to simmer for 10 minutes.
Add the chutney, coriander, and a pinch of salt and pepper. Remove from heat, and allow to cool completely before using as a filling.
Once cooled, preheat your oil to roughly 180 degrees Celsius. Lay out a samoosa pastry piece lengthways, and add a spoon of cooled filling to the bottom corner. In a repeated pattern, begin folding the samoosa from corner to corner, slowly forming the greater triangle shape. Ensure you wrap them tightly so they do not burst during frying.
Once completed, fry them in small batches until golden brown, crispy and puffed up. Drain on paper towel and allow to cool for a few minutes.
Serve with chutney and cucumber raita to dip, and enjoy!
