
KOO Corn and Bacon Salad with Mrs. Balls Peach Chutney

Ingredients
1 packet bacon, chopped
1 clove garlic
1 tsp smoked paprika
½ cup Mrs. Balls Peach Chutney
2 tbsp chives / parsley, finely chopped
2 tins KOO Whole Kernel Corn, drained
½ cucumber, cut into cubes
1 cup tomatoes of choice, chopped
1 red onion, finely diced
1 avocado, peeled and cut into cubes
Salt and pepper
Method
Place the chopped bacon into a large, cold pan, and bring up to a medium heat. This way, you will render the fat out of the bacon, making it extra crispy. Cook the bacon until the fat is released, and you have golden and crispy pieces.
Add your garlic, smoked paprika and Mrs. Balls Chutney, stir well, and cook for a further minute to infuse. Remove from heat, add your fresh herbs.
Add the KOO Corn to the pan, and toss well. Carefully add the remaining salad ingredients, except the avocado, and gently mix together.
Plate onto a large plater for serving, finish with the chopped avo, and garnish with freshly chopped herbs, edible flowers or micro herbs. Enjoy!
Chefs tips
KOO Corn in the base of the salad, but feel free to add in your own favourites too – this would also be delicious using KOO 4 Bean Mix, or KOO Butterbeans.
We’ve used Mrs. Balls Peach Chutney, but you could use Mrs. Balls Jalapeno Chutney for a spicy twist!
