KOO mixed vegetable Pot Pie

KOO Chicken and Mixed Vegetable Pot Pies

Serves 6-8

2 tbsp butter
1/3 cup flour
½ tsp nutmeg
2 ½ cups milk
4 chicken breasts, cooked and shredded
1 tin KOO Mixed Vegetables in Brine, drained
1 tin KOO Whole Kernel Corn in Brine, drained 
1 roll puff pastry, defrosted and rolled 
1 egg, beaten
Salt and pepper
Side salad to serve                 
Preheat your oven to 200 degrees Celsius. Melt the butter in a saucepan, and add the flour and nutmeg. Mix well to avoid lumps, then slowly stream in your milk while stirring until all the milk is used. 
Continue to stir over a medium heat for roughly 15 minutes, until the sauce is thickened and smooth. Add the chicken, and KOO Vegetables. Add a generous amount of salt and pepper, and mix well.  Set aside. 
Grease 8 ramekins or baking dishes with butter, then spoon in your filling until it is about 1cm below the rim. Cut out the puff pastry lids roughly 1cm larger than the ramekins, and place onto the ramekins. Tuck tightly around the top. Pierce a small hole in each lid to allow steam to escape.

Brush with the egg and bake until bubbling, golden brown and delicious. Allow to cool for 5 minutes before serving.
