KOO BBQ Chicken Burgers with Fried Gherkins

For the batter
12 KOO Sweet and Sour Gherkins
1 cup flour
1 cup milk
1 tsp baking powder
1  egg
1 tbsp cajun spice
2 cups panko crumbs / breadcrumbs 
For the burgers :
4 chicken burgers / schnitzels, cooked
4  burger buns, toasted
2 cups coleslaw
4 tbsp  sriracha / chilli sauce                              
Oil to fry 
Salt and pepper    
Preheat your oil to roughly 180 degrees Celsius. Pat the gherkins dry, then combine all the batter ingredients in a bowl and mix together until smooth. Allow to stand for 5 minutes. 
Carefully dip each gherkin into the batter, allow the excess to drip off, and then coat in breadcrumbs. Repeat this process if your crumbs do not stick the first time round. 
Once coated, fry gently for 2-3 minutes until golden brown and crispy. Remove from the heat and place on a paper towel to cool slightly and drain. 
Assemble the burgers by placing a big dollop of coleslaw on the base of the bun, followed by the chicken patty. Add another spoon of coleslaw, and drizzle over the sriracha sauce. Close the bun, and secure with a skewered gherkin. Serve immediately and enjoy!
