
KOO 4 Bean Salad Cups with Lamb Chops

Ingredients
1 tbsp oil
1 red onion, peeled and finely chopped
1 clove garlic, chopped
1 tbsp curry powder
1 tsp turmeric
3 tbsp chutney
1 tbsp coriander, chopped
2 tins KOO Four Bean Mix in Brine, drained
1 tin KOO Whole Kernel Corn in Brine, drained
1 head lettuce, leaves broken into cup shapes
8 lamb chops
Salt and pepper
Method
Heat the oil in a frying pan, and add the onion and garlic. Cook for 2 minutes, then add the curry powder and turmeric. Cook for a further 2 minutes until fragrant, then add the chutney and coriander. Toss and remove from heat.
Add the KOO Beans and Corn to the pan with a big pinch of salt and pepper, toss to mix, and place in a bowl. Set aside for assembly.
Fry or braai the lamb chops, seasoned well with salt and pepper, until golden brown and crispy. Set aside.
Spoon the bean salad into the lettuce cups, and serve with your crispy lamb chops.
