Jungle Tropical Shortbread Muesli

Jungle Tropical Shortbread Muesli

Recipe: Boitumelo 'ChewMe' Mogoai
Serves: 12-16 bars

Baking time: 40 min

1 ½ cup flour

1/3 cup sugar
¼ tsp salt
¾ cup cold butter, cut into cubes

Muesli bar
1 cup Jungle Tropical Muesli
¼ cup pineapple jam
¼ cup pecan nuts, roughly chopped
melted dark chocolate

Pre heat oven to 200°C. Lightly grease and line a square cake tin with baking paper.
In a bowl, mix flour, sugar and salt then rub in the cold butter to create and crumb-like mixture. Make sure not to over work the dough as you want it as crumbly as possible. Pour mixture into the lined cake tin and press down to form a layer of dough at the bottom.
In another bowl, mix the Jungle Tropical Muesli, pineapple jam and pecan nuts. Pour this mixture over the shortbread dough also press down before baking for 30-40 min. Top will be golden brown when baked.
Remove from the oven and let cool completely before taking out of the baking tin. Cut the bars into desired width and Enjoy.
