Jungle Muesli Bircher

Cooking Time: 30 minutes plus extra for setting


Jungle Muesli Layer
95 g Jungle Muesli: Tropical
1 cup double cream yoghurt – plain
100ml coconut milk
1 red apple grated
1 tsp maple syrup
¼ tsp ground cinnamon
pinch of salt
1 tsp lemon juice

For the mango layer
300 g frozen mango
1 tsp maple syrup

To assemble
1 green apple, cored and cut into matchstick
1 cup seasonal berries of your choice, chopped
toasted coconut flakes
½ cup Jungle Muesli: Tropical

2 medium-sized sterilized jars with lids

In a medium bowl, mix the Jungle Muesli layer ingredients together until well combined. Cover and refrigerate for at least 1 hour to allow it to soften and soak up all the flavours. Meanwhile, make the mango layer. Combine the ingredients in a small saucepan and bring to a boil over a medium heat. Reduce to a simmer and cook for about 7–8 minutes, until the liquid has reduced and the mixture is taking on a jammy consistency. Allow to cool and set aside. To assemble start by portioning out half of the Jungle Muesli mixture between your two jars. Next, carefully spoon the mango mixture into each jar and top with the slices of apple and chopped berries. Lastly, top each jar with the remaining Muesli mixture and garnish with more Jungle Muesli Tropical. Store in the refrigerator overnight for the best results.
