Jungle Mixed Berries Muesli Scones

Jungle Mixed Berries Muesli Scones

Recipe: Boitumelo 'ChewMe' Mogoai
Serves: 12-16

Baking time: 15 – 20 min

INGREDIENTS
2 ½ cup self-raising flour

1 tsp ground cinnamon
1 tbsp caster sugar
30g butter
1/2 cup Jungle Mixed Berries Muesli
1/4 cup honey
3/4 cup milk

METHOD
Preheat oven to 200°C. Lightly grease and line a baking tray. Starting with the dry ingredients, sift flour, cinnamon and sugar into large bowl then rub in the butter with your fingertips leaving some butter visible. Add the Jungle Mixed Berries muesli and stir through. Make a well in centre of the flour mixture, add honey and milk. Gently fold wet into dry making sure not to over-mix then turn mixture onto  floured surface once it has slightly come together. Press dough out to 2cm thickness. Dip 4.5cm cookie cutter into flour then cut as many rounds as you can from the piece of dough. Place scones side by side, but not touching, in the greased pan. Gently bring scraps of dough together, repeat pressing and cutting of dough. Place in same pan. Brush tops with a little extra milk. Bake scones about 15 minutes or until browned and scones sound hollow when tapped firmly on the top with fingers. Enjoy!
