Jay’s Quick Jam

Jay’s Quick Jam

Makes 500ml
Recipe time: 30 minutes
750g fruit of your choice
¼ cup lemon juice
zest of 1 lemon
1 tsp vanilla paste
500g brown sugar
1 star anise (optional)
1 cinnamon stick (optional)
2 x 250ml jar for storage
Clean and roughly chop your fruit and place on a baking tray. Place in freezer and freeze until solid. Place the frozen fruit in a pot then place over a low heat and simmer for 5 minutes stirring occasionally until the fruit breaks down.

Add the lemon juice and zest along with the spices if using. Add the sugar and vanilla and increase the heat, bring to the boil. Skim off any foam from the surface – so you’ll have a clear jam! Continue to cook until thickened +- 30 minutes.

Allow jam to cool slightly before pouring into two sterilized jars and allowing to cool completely.
