Ice Cream Sandwiches

INGREDIENTS

12 giant cookies (flavour of your choice)

1 x tub (480 ml) ice cream (flavour of your choice)
80 g dark or milk chocolate
chopped nuts, to decorate
coloured sprinkles, to decorate
 
METHOD

Take the cookies and the ice cream from the freezer. Dip ice cream in a plastic tubs for 3 seconds in luke warm water and remove from the tub and cut the ice cream in 4 rounds. If the ice cream is in a paper cup, use a serrated knife to cut the ice cream going straight through the paper cup, then peel away the paper from the ice cream slices. 

Sandwich the ice cream between the cookies. Melt the chocolate in a small bowl in the microwave or over simmering water. Dip one quarter of each cookie in the chocolate and then dip half in chopped nuts and the other half in coloured sprinkles. Keep in the freezer until served.
