How to prepare for high tea

Serves : 12
Preparation time: 20- 30 minutes 

savoury – mushroom macaroons
12 button mushrooms
125g of cream cheese
20g chakalaka
1tsp ground coriander
salt and pepper to taste
1 bunch fresh coriander, finely chopped

sweet – take on a Hertzoggie
12 store bought pastry shells
2 cup apricot jam
10-12 white marshmallows
¼ cup of desiccated coconut

High-tea stand
1 pack of store bought mini caramel swiss-rolls
12 mini cupcakes
8 mini beef mince curry vetkoek 
1 pack of ready to eat chicken samosas
3 tier cake stand
paper doilies
flowers  -fresh flowers

For the mushroom macarons, remove the stems from the mushrooms and gently blanch them in a pot of boiling water for 3-4 minutes. Remove from water and quickly sauté in melted butter for 2-3 minutes.
While the mushrooms cool move on to the filling. Mix the cream cheese with the chakalaka, ground coriander and season to taste.
Fill the cavity of each mushroom with the filling, be generous.
Sandwich two mushrooms together to make the macarons
Generously place the coriander on a plate and roll each mushroom macaron into it so that it sticks to the outside of the macaron.
Set your oven on grill.
Lay out your tart shells on a baking tray lined with baking paper.
Spoon a teaspoon of jam into each shell.
Place the marshmallows into a microwaveable bowl, greased with a little cooking oil, and place into the microwave in 30 second intervals until fully melted. Make sure to stir in between to avoid burning the marshmallows.
Add the desiccated coconut and stir until combined.
Spoon a tablespoon of the coconut mixture onto each tart and spread with the back of your spoon to cover the entire tart.
Place the tray of tarts into the oven for 3-5 minutes until the coconut topping begins to brown slightly.
Remove from oven and allow to cool to room temperature.
To assemble your high tea stand start at the bottom tier. Alternating with each of the savoury options as you go around the tier. Next, adorn the second tier with your delicious hertzoggies. Finally, place the mini swiss rolls and cupcakes on the top layer and stand back with pride.
