How to Make the Perfect Crepe

INGREDIENTS 
1 cup all-purpose flour
1 tbsp white sugar
¼ tsp salt
2 eggs plus 1 yolk
1 ½ - 2 cups milk
2 tablespoons butter, melted
vegetable oil for cooking

Serving options:
icing sugar
cream
strawberries
mint leaves
chocolate spread
butter
maple syrup

METHOD
Sift together flour, sugar and salt then set aside. In a separate bowl, whisk eggs and milk together then beat in the flour mixture until smooth before stirring in the melted butter. Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the pan using a ladle. Tip and rotate pan to spread batter as thinly as possible. Brown on both sides and serve hot with desired toppings and fillings. Enjoy!
