Homemade granola with yoghurt and strawberries

Serves: 3-4

2 cups rolled oats

2 cups puffed brown rice
1 cup coconut flakes
1 cup pecan nuts *optional (you can replace this with peanuts for budget reasons)
1/3 cup honey (this can also be syrup - I use raw local honey for health reasons)
1/3 cup coconut oil (this can be any oil)generous pinch of salt
1 tsp vanilla extract
1 ltr double cream yoghurt
honey to taste
1 tsp vanilla paste or essence
rind of a lemon
500g strawberries (this can also be apples for budget reasons - I will say this on the day)
1/4 cup honey (this can also be sugar - I use raw local honey for health reasons)
2 tsps vanilla paste or essence (I want to use paste but will mention essence)
generous pinch of salt
2 tbsp mint, chopped
juice of 1/2 a lemon

To make the granola, mix all the dry ingredients together. Melt the honey and coconut oil together, stir through the vanilla paste. Stir through the granola. Bake at 160C for 30 minutes but make sure to stir every 10 minutes and keep a close eye because the nuts may start burning.

For the yoghurt; mix all the ingredients well and then pop the yoghurt in a clean tea towel thats resting in a colander and leave to drain for at least 24 hours before serving. I leave it in a bowl in the fridge.
For the strawberries; pop all the ingredients except the mint and lemon in an oven proof dish and roast at 180C for 20 minutes or until the berries are soft and lush.

Stir the mint and lemon in before serving.
