
Grilled Kingklip Topped with Citrus Juice

Ingredients
4 fresh kingklip fillets
2 Tbsp unsalted butter
Pinch of salt and pepper
2 whole orange zest
100ml orange juice
1 whole lemon juice
100g capers
2 Tbsp. honey
Micro herbs to garnish
Method
Pour milk and cream into a sauce pan with sugar and vanilla
Stir to combine and let it simmer, remove from the heat. Pour into 4 ramekins and place it in the fridge to set for at least 1hour.
To serve carefully turn the ramekin up side down on the side plate, if the panna cotta is refusing to come out, deep it into the bowl of warm water.
Serve with mixed berry coulis and garnish with fresh mint leaves.
